When it comes to biscuits to accompany a good cup of tea, we all have our favourites. My personal favourite is the custard cream - they are THE best tea-dunking biscuit! And my boyfriend agrees. So I made up a batch of homemade custard creams, to make a change from the usual shop-bought ones...it gave me the opportunity to use my amazing new cutter as well!
Ingredients
For the biscuits:
100g margarine/butter
100g plain flour
50g caster sugar
50g custard powder
1tsp vanilla extract
For the filling:
75g butter/margarine
150g icing sugar
50g custard powder
Method
Cream the butter and sugar in a bowl. Fold in the flour, custard powder and vanilla until a dough is formed.
Flour a surface and roll out the dough to about 1/2 cm thickness. Cut out the shapes, ensuring you have an even amount/duplicates of the shapes you have cut.
Place your shapes on a baking tray lined with baking parchment and bake in the oven at 200C/fan 180C/gas 6 for about 10 minutes/until golden brown. Transfer to a wire rack to cool.
Mix the icing sugar, butter and custard powder and spread onto one half of a biscuit, then push the other half on top. Repeat until all biscuits are filled, and enjoy!
