Peanut butter & jam flapjack

Mmm peanut butter & jam...like it on toast? Try it in flapjack!

I really think this is the best flapjack I have ever made. I know, that sounds like I'm blowing my own trumpet [and I am], but the combination of peanut butter and jam really does make it more than just your average flapjack. It even beats apple & cinnamon flapjack, which I thought was my favourite. That was before I tried this.

I altered this recipe, which I found via pinterest to make my flapjacks. So, so simple and so, soooo tasty. Want to make your own? Read on!

You'll need:
6 tbsp golden syrup
200g butter
150g peanut butter
250g porridge oats
4 tbsp jam [I used raspberry]

Method:
Grease and line a baking tray and pre-heat the oven to 180 degrees celcius.

Place the butter, peanut butter and golden syrup into a large saucepan and melt on a low heat, stirring until combined.

Add the oats and mix in until well combined.

Spread the mixture evently across the tin and flatten, then trickle jam over the top in whatever fashion you fancy. I just did random lines everywhere.

Bake for approx. 25 minutes/until golden brown. Leave to cool for around an hour, then pop into the fridge for a further hour before cutting into slices - however big you like.
