Rocky Road

I fancied doing a bit of baking today, but didn't want to make too much effort - Rocky Road seemed like a good choice. I've only made this once before, but it was easy and the results were good, if a little calorific!


Being a veggie, I had to miss out the marshmallows [otherwise I can't enjoy any of it myself - not having that! Although have found some veggie ones online..], but I used digestive biscuits, chopped mixed nuts and walnuts.

You will need...

300g chocolate [dark, milk or a mixture]
125g butter
3 tablespoons Golden Syrup
200g biscuits
100g mini marshmallows [if you're using them]
Plus any other goodies you may want to add.


The Method

Heat the butter, chocolate and golden syrup in a bowl over some steaming water, stirring it as it melts.

Save about a third of your chocolate mix, as you'll need it later.

Put your biscuits in a bag, and crush them using a wooden rolling pin..not too much though, or the pieces won't be very chunky, and that's how you want them [or it's how I like them in my rocky road]!

Add your biscuits, marshmallows and any other treats to the chocolate mixture and stir it all in. Once everything is nicely coated, put it all into a tray, lined with greaseproof paper, and flatten down.

Pour the chocolate mix you left spare over the top and smooth over. Put it in the fridge for a good couple of hours, cut into squares and enjoy!

  5. That looks like some mighty fine rocky road - for an alternative try ginger nuts and dark chocolate, it's gorgeous!
