1 cup cashews (approximately 125g) - soak in water for an hour or two first
1/2 cup cacao butter, melted
1/4 cup Sweet Freedom sweetner (or similar - could substitute with agave nectar or honey)
2 tsp vanilla extract
Blend the cashews, sweetner and vanilla in a food processor until smooth - be patient as this does take a little while!
Add in the melted cacao butter and give it another whizz until well combined.
Spread the mixture onto a tray lined with parchment paper (you could also pour into moulds/cases). Sprinkle something on top if you like - I went for raw cacao nibs. Pop into the freezer for half hour and cut into little slabs before enjoying :)
these look yummy! I don't know much about raw foods but this looks doable! Where do you get that sweetner from? x
