These sticky, squidgy cookies would make a great snack and, even better, are only about 145cals each!
Ingredients
1 cup (225g) sugar
1/4 cup (55g) butter
1.5 Tbsp. cocoa powder
1/4 cup (approx. 60 ml) milk
1/4 cup (55g) crunchy peanut butter
1 tsp vanilla extract
1.5 cups (135g) rolled oats
Method
Mix the butter, sugar, cocoa and milk in a medium sized saucepan and bring to the boil. Let boil for one minute, stirring continuously.
Add in the peanut butter and vanilla and mix well until the peanut butter has melted.
Add the oats and mix until well combined.
Place spoonfuls of the mixture onto baking paper and allow to set and cool completely.
